We need shapes that look like my drawing below:

Is this possible using DIA/SVG? Can't find anything about this in the documentation.

DIA/SVG stencils are not implemented in mxGraph (only in JGraphX/Java). You can use this example for custom shapes, and combine it with either HTML labels (or use only HTML labels) and/or multiple labels as demonstrated here.
